Independence Day Update


I started a skeleton of a post a few days ago and will just flesh it out a little here.

I have been eating raspberries and peas here and there as they have ripened. This morning, I harvested about 1/2 C of raspberries and 1 1/2 C of snap peas. There is another large harvest of peas coming. I estimate that we will harvest about 24 C or 1.5 gallons of peas in total for the season (with about 20' of row double planted)
. The first basil harvest happened a couple of days ago and it went mostly to caprese salads. I have also been harvesting kale, lettuce, chard and parsley.

Lilies and clematis have finished flowering. Currently blooming are balloon flower, coral bells, hosta, daisy, and daylily. Almost blooming are echinacea, bee balm, and black-eyed susan.

We noticed the first cicadas this morning.

Here is a tabouli recipe that works well for us:
- 2-3 garlic cloves minced in food processor
- fill food processor with parsley crowns
- pulse to desired size
Mix in large bowl with:
 * 1-2 C quinoa
 * 1/2 can of organic diced tomatoes
 * 1 medium fresh tomato diced
 * juice of 1/2 lemon
 * sprinkles of ume plum vinegar
